Eating clean meals, food that is fresh and delicious can be part of that journey. This orange-chicken and asparagus dish is packed with flavor, you will love it. If you like soft asparagus (like my husband) then cook it longer than instructed.
1 In a large skillet, heat ½ of the oil, when hot add chicken pieces and season lightly with salt and pepper
2 Sauté until cooked through, remove chicken from pan to a plate
3 Using the same skillet, add remaining oil, add asparagus to the hot oil then onion, and mushrooms. Sauté for five minutes then add in garlic and ginger, cook for one more minute
4 Meanwhile, in a mixing bowl, whisk together chicken broth, orange juice, honey and cornstarch
5 Pour chicken broth mixture into skillet with veggies, season with salt and pepper
6 Bring to a boil, stir constantly until it thickens, about 1 minute
7 Toss chicken into mixture. Serve over brown rice or quinoa
