Healthy Quinoa Chicken Parmesan

We love Chicken Parmesan at our house, but it can be so full of the wrong stuff that won’t help us lose weight.  This recipe is full of good nutritious food and tastes delicious too. Who said eating clean and healthy is hard?

Ingredients

1 c
dry quinoa
1 T
Italian seasoning
4  
small chicken breasts (boneless and skinless)
1⁄2 t
garlic powder
1⁄2 t
sea salt
1⁄4 t
Pepper
1⁄2 t
paprika
1⁄2 t
cumin
1⁄2 t
onion powder
1⁄4 t
ground red pepper
1 c
almond flour or whole wheat flour
2  
large eggs beaten
1⁄4 c
Grated Parmesan cheese
1 cn
crushed tomatoes
   
Italian seasoning

Instructions

1 Preheat oven to 400°F. Spray baking dish
2 Cook quinoa as directed and add Italian seasoning. Set aside
3 Make a seasonal mix with garlic powder, salt, pepper, paprika cumin, onion powder, and red pepper
4 Add seasonal mix to the almond or whole wheat flour and mix in well
5 Salt the chicken on both sides
6 Dredge chicken in flour then dip in egg then dredge in cooked quinoa
7 Place in prepared baking dish and bake for 25 minutes
8 Add some Italian seasoning and salt to the crushed tomatoes and mix in well
9 When chicken is cooked remove from oven and top it with crushed, seasoned tomatoes and cheese. Finish baking for 4 minutes or until cheese has melted
10 Top with parsley flakes and serve with vegetables
